This semolina banana bread is the best way to use up overripe bananas. This moist and flavourful bread is packed with ripe bananas, giving it a natural sweetness and rich banana flavour, perfect for breakfast, a snack or dessert.

- 2 large ripe bananas, peeled
- 1 cup Laila Semolina Fine
- 1 cup rolled oats
- 2 medium eggs
- 1 cup honey
- ½ teaspoon cinnamon
- 1 tsp baking soda
- 1 tsp vanilla extract
- ½ cup walnuts, chopped and toasted
Method
- Preheat the oven to 180°C and line a loaf tin with baking paper.
- Whizz the bananas (keep some for garnishing). Combine semolina flour, oats and eggs in a food processor until smooth.
- Fold in honey, cinnamon, baking soda, vanilla extract and walnuts.
- Pour the mixture into your prepared loaf tin and place the remaining banana slices on top. Bake for about 20 minutes. Insert a skewer, if it comes out clean then the loaf is cooked through.
- Let it stand and cool for 10 minutes on a wire rack.
- Lift the bread out, slice and serve.
